Could be just the jack socket, is it worse when you move the lead in the socket or rotate the pots?

Sharp is short & flat is long if the harmonic is sharp the string is too short - you need to move the saddle further away from the nut. HTH John

Yes you need a common ground wire from the centre 'hole' of the jack socket to the pot bodies & the bridge.
