For me, check out buckethead, he plays a custom les Paul which is a 28" scale, instead of a 25.5 or 30". Sounds immense.
James Hetfield has used one too But I think, notoriously, mike mushok from staind has used many baritone guitars as well as signature models.
I've owned a gretsch baritone, hefty piece of kit but tone and feel to it was awesome, like mentioned. . . Use a capo and you have a guitar or naturally play bass lines on it.
