Don't really know about delay pedals. I've had a Google, but didn't come up with anything.

Is there a delay pedal that can will continue to sound the repeated note until the next note is struck?

Yeah, you can set the number of repetitions through the feedback knob, but it will not stop the delayed notes when you play another one...ehm...hope I clearly explained ained ained ained :-)

The TC Flashback has a mode where the delayed signal is suppressed while you're playing and then comes up to fill the spaces between your playing - that might get close to what you're looking for.

Boss DD-6 has a mode where you hold the pedal and it repeats until you release it. Our guitarist uses one on this video:-

Or the EHX Freeze sustains the last note you play for as long as you hold the button down.
