My telecaster was pale white, is now a nice banana custard yellow / brown. Only problem is 25 years time and plenty of sunlight :( UV may well work.

Manchester guitar tech flogs a tinted gloss clearcoat nitrocellulose lacquer that you could spray over your poly finish.

He explains: "where the lacquer colour shows a darker shade on the right hand side, it represents the colour of the lacquer when sprayed over with my Light Tint Gloss clearcoat."

Hang above sofa for 20 years, smoke on said sofa for same 20 years, gig in very smokey venues for most of those 20 years.

Or use that stuff from the manchester guitar tech, it's quicker. :)
