I'm not a fan of the band or the music, but I always think of Richie Sambora's solo on Bon Jovi's Keep the Faith as the 'perfect' solo for the song. Just a very well crafted piece of music IMO. Solo starts at about 3.00.

I was in the audience when Richard Thompson recorded for Radio 1 'In Concert' in 1981/2. Took me a few minutes to work out where the extra guitar was coming from, then spotted a familiar frizzy-haired tele player hiding at the back. Yup, Albert Lee and Richard Thompson on stage together in front of about 200 people.

A lot of Brian May's solos - not always the most exciting things but I struggle to think of a Queen song where the solo hasn't contributed and felt like an essential part of the song. Particularly Killer Queen and Crazy Little Thing Called Love.

Scott Gorham Dancing in the moonlight.
Brian Robertson Dont believe a word.
Gary Moore Toughest Street in town.
Snowy White Killer on the loose.
