Just wondering, if someone is talking about whether a bassist or a piece of music they've recorded on, referring to it (or them) as 'chopsy' what they are talking about?

i guess the easiest way to explain "chops" is as technical skill

if someone has good chops they are good at their instrument

and so if a piece of music is chopsy (i've not heard that one before) its technically very good with the purpose of making the players

look very good
