On an active bass, there's usually three tags on the socket that have wires attached to them - I think the sockets are stereo sockets? Mostly - they're fully enclosed, so how on earth do you decide which wire to solder onto which lug?

They are called TRS sockets, Tip, Ring, Sleeve. You are referring to a barrel socket. Almost without fail wiring will be sleeve earth, ring will be battery and tip will be hot.
