building a bass 

I'm building a bass for the first time. Does anyone know how i wire these pick-ups. How Many pots ect. It will be a passive bass

You want to wire all 3 pickups? Active or passive? The simplest would be volume 3x plus a tone, but I personally would only use the P and MM pickup. The jazz will have a weaker output than the P or MM, so might as well leave. A VVT wiring diagram you can easily find on Bestbassgear.com, an excellent wiring diagram resource.

Are you going with a 7 way switch to maximise (I think) all the permutations? Active/Passive? 

Personally I think that Andyjr1515 or JabbaTheGut are probably your best bet for advice but there is a builders forum that they use which may be (even?) better - if that's possible.

There are all sorts of options/ standard wiring diagrams in there. It’s worth taking the time to look through and there is a translation section at the end (but it’s mostly obvious)

I think you are asking the question backwards. You have to really decide what controls you want before anyone can say how to wire it.

Volumes, pans, switched, coil taps, switched?
