Haysead Dixie obviously comes to mind. 
And Luther Wright & the Wrongs' Rebuild the Wall is an entire bluegrass version of Pink Floyd's The Wall that's worth checking out.

While I was listening to that, YouTube suggested Iron Horses two discs of bluegrass Metallica covers to me. Mmmm.

Think I remember a band (possibly from the Leeds area) called the Above Average Weight Band.

There's, or was, a Scottish tribute to RATM called Radge Against The Machine. Incredibly clever, "radge" is a term of abuse up there, as many words are come to think of it.

And also, the Average Bar Band. 

 

What about the Dixie Chicks all-transvestite band - Chicks with Dixie.

The really good ones tell you who they tribute , tell you that they are not the original band,, and make you laugh too:

I know of some guys who have played as Geoff Leppard (rather than Jeff) in "tribute" to the patron saint of Lotus owners, Geoff Capes.

 

I've toyed with forming a fake boy band called Westlike

Elvana - the Elvis fronted Nirvana covers band?

Their version of Aneurysm is a thing of genius but I'm  not certain I could stick a full gig

Aye I was bassist in that band for a bit and came up with the name 😂

There is/was also Bon Geordie up here if I remember right.
