It’s ideal, IMO. I use 2x10 combo, which is plenty for most gigs. But with the added 2x10 extension, it’s just bigger and better, and not just from a loudness POV. 
Agreeing with what’s already been said, one 2x10 will likely do, but 2 of them has everything covered.

Yes.. but some of them no.  There's no logical reason why a 1x15 would fart/distort at higher levels than a 2x10.

 

I mainly play rock/punk so won't need extreme amounts of low frequencies. 

If you don't need 'extreme' amounts of low end does your amp have the ability to high pass the signal?  If yes then lots of cabs will do what you want inc 1x12's.

 

Or would it be worth changing out speakers? 

Not unless your cab is designed around the replacement driver specs or you buy speakers to match the cab dimensions.

 

One of my 2x10 cabs was more than enough for most pub gigs; 2 was often overkill but when stacked vertically they were the match for any cab(s) in pure volume.
