My favourte tuner is Tascam.

 

As for machine heads, whichever works best in whatever particular style I'm considering.

If the stock ones are satisfactory, those. If not then I'm pretty omnivorous - Gotoh, Hipshot, Schaller, Wilkinson, Grover - whatever fits in the hole with the appropriate style of button.

Got to be Denon for tuners (loving my Tu-1800dab)

For machine heads I'm usually happy with whatever the manufacturer has chosen, when I was picking them for custom builds I went for usa hipshot ultralite.

Gotoh

 

Especially the Gotoh GB(R) 640 Res-O-Lite. One of the smoothest actioned tuning keys I’ve ever used. I’ve asked Gotoh to make Res-o-lite versions of the FB30 (Fender 70’s keys) as well but they said there’s no plans to do so. The GB350 keys are also amazing and very light.
