From where in my chain do I do ad-hoc recording?

Not that familiar with the Tonex myself, but it has multiple outputs, inluding headphone. My usual go-to advice for ad-hoc recording: why not just hook up a Zoom / Tascam recorder? No need for mixers, interfaces, software, it's as ad-hoc as it gets.

Excuse my ignorance but the irig HD has a usb out and an amp out correct? 

Isn't that a splitter and audio interface in one?
